This Egg Salad recipe is simple, creamy, and delicious! All you need are a few ingredients and you can whip this up in no time! Egg Salad is great to throw on your favorite bread as a sandwich or for a low carb option you can use a bell pepper. Top this with some Valentina Hot Sauce and you will enjoy every bite!

Meal Prep Idea

Egg Salad is one of my favorite meal prep ideas. All you need to do is just boil a bunch of eggs, add a few ingredients, like mayonnaise, mustard, spices, and celery and you have yourself a healthy option in your fridge ready to go! This is also a great recipe to make for any group gathering or party.

How to Boil Eggs

  • Boil – Place your eggs in the bottom of a large pot. Fill the pot up with water and set the heat to medium – high heat. Bring the water to a boil. Once the water comes to a boil cover with a lid and turn off the heat. Let that sit on the stove covered for 11 minutes. While those are cooking prepare a large bowl of ice water. When the timer goes off carefully transfer the eggs to the ice water with a large spoon. This will shock the eggs and stop the cooking process. After 2 minutes you will be able to peel the eggs. Let the eggs cool for about 30 minutes after you peel them.
  • Airfry – Yes you can Air Fry Eggs! Place the eggs in the air fryer basket. Cook at 275 for 17 minutes. After the eggs are cooked place them in an ice bath for 2 minutes then peel.
  • Electric Egg Cooker – I love using this tool! We received one of these as a Christmas gift and it’s so easy to use! It definitely encourages me to cook hard boiled eggs all the time. Which is a great healthy snack on its own. Best part is it does all the work for you! It only takes about 15 minutes to make hard boiled eggs and all you have to do is add a little bit of water to it.

How to make Egg Salad

After the eggs have cooled it’s time to put everything together. Chop up the eggs and place in a large bowl. Then add the mayonnaise, mustard, celery, and spices. Mix everything together and that’s it! Cover and let this sit in the fridge for an hour before serving.

Simple Egg Salad

This Egg Salad is a quick dish you can have for breakfast or lunch!

Ingredients

  • 7 Eggs Hard Boiled
  • 1/3 Cup Mayonnaise Light
  • 1 Tablespoon Mustard Yellow
  • 1 Celery Stalk diced
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/4 Teaspoon Paprika

Instructions

  • First you will need to hard boil the eggs on the stove top. Fill a pot with water and add the eggs to it. Turn the heat to medium – high heat and bring to a boil. Once it begins to boil turn off the heat and cover. Let that sit for about 11 minutes.
  • Once the timer goes off transfer the eggs carefully with a large spoon or ladle to a bowl of ice water. Let them sit in there for 2-5 minutes. Remove them and peel the eggs. Let the peeled eggs cool for about 30 minutes before chopping.
  • Roughly chop the hard boiled eggs then add to a large bowl. Dice the celery stalk and add to the same bowl.
  • Add the mayonnaise and mustard to the bowl and mix together. Then season with salt, pepper, and, paprika. Stir until well combined. Cover and place in the fridge for one hour before serving.
  • Serve egg salad on toasted bread with lettuce or for a low carb option serve it on a sliced red bell pepper.
