Cilantro Lime Baked Fish

This Cilantro Lime Baked Fish uses Swai a mild tasting fish or you can use tilapia. I love to flavor it with cilantro, garlic, and lime and add colorful bell peppers.

Ingredients

  • 4 Swai Filets or Tilapia
  • 3 cloves Garlic mashed
  • 1 Lime
  • 1/2 cup Cilantro chopped
  • 1/2 cup Onion sliced
  • 2 Bell Peppers yellow, red, or green
  • salt and pepper to taste

Instructions

  • Preheat oven to 350 degrees.
  • Rinse and pat dry the fish filets.
  • Line a baking sheet with aluminum foil and place the fish on top.
  • Squeeze lime over fish and season both sides with salt and pepper. Rub mashed garlic over filets with a spoon.
  • Slice onion and bell peppers and chop cilantro leaves. I do not use the stems.
  • Sprinkle cilantro on top of fish filets.
  • Place onion and bell peppers on top of fish or you can sit the fish filets on top of the onion and bell peppers.
  • Cover with foil and bake for 20-25 minutes.
  • Serve with rice.
