Cuban Beef Picadillo

Ingredients

  • 1 tablespoon Olive Oil
  • 1/3 Cup Onion diced
  • 1/4 Cup Green Bell Pepper diced
  • 1 Roma Tomato diced
  • 1/4 Cup Cilantro
  • 2 Cloves Garlic mashed
  • 1 pound Ground Beef
  • 1/2 Tablespoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Cumin
  • 4 oz Tomato Sauce
  • 2 Tablespoon Green Spanish Olives
  • 1/4 Cup Water
  • 1 Bay Leaf

Instructions

  • Heat olive oil in a pan on low to medium heat. Once the oil is hot add onion, green pepper, cilantro, diced tomatoes, and garlic to the pan and cook on medium heat until soft. 2-3 minutes. Stirring often so you don't burn the garlic.
  • Add the ground beef to the pan and break up the meat. Season with salt, pepper, and cumin. Mix together and cook the meat for about 5 minutes or until it is no longer pink. Cover with a lid so it can cook faster. 
  • Once the meat is cooked turn off the stove. Drain the excess liquid and return back to the stove.
  • Add the tomato sauce, olives, water, and bay leaf to the pan. Stir together. Cover and cook on low for 25 minutes.
  • Serve over rice.
