Cuban Beef Picadillo

- 1 tablespoon Olive Oil
- 1/3 Cup Onion diced
- 1/4 Cup Green Bell Pepper diced
- 1 Roma Tomato diced
- 1/4 Cup Cilantro
- 2 Cloves Garlic mashed
- 1 pound Ground Beef
- 1/2 Tablespoon Salt
- 1/2 Teaspoon Pepper
- 1 Teaspoon Cumin
- 4 oz Tomato Sauce
- 2 Tablespoon Green Spanish Olives
- 1/4 Cup Water
- 1 Bay Leaf
Heat olive oil in a pan on low to medium heat. Once the oil is hot add onion, green pepper, cilantro, diced tomatoes, and garlic to the pan and cook on medium heat until soft. 2-3 minutes. Stirring often so you don't burn the garlic.
Add the ground beef to the pan and break up the meat. Season with salt, pepper, and cumin. Mix together and cook the meat for about 5 minutes or until it is no longer pink. Cover with a lid so it can cook faster.
Once the meat is cooked turn off the stove. Drain the excess liquid and return back to the stove.
Add the tomato sauce, olives, water, and bay leaf to the pan. Stir together. Cover and cook on low for 25 minutes.
Serve over rice.
