Combine oats and almond milk in a small pot. Cook on medium heat for 10-15 minutes or until almond beverage is almost evaporated.
To clean mushrooms just take a damp paper towel and wipe mushrooms to remove any dirt.
Roughly chop mushrooms.
Spray a pan with olive oil spray and put on low - medium heat.
Once the pan is hot add the mushrooms and saute until brown.
Once the mushrooms are brown push them to the side of the pan and crack 1 egg in the same pan. You may need to add more oil spray.
Cover with a lid and cook for 1-2 minutes depending on your yolk preference.
Add oatmeal, mushrooms, and egg to a bowl and top with Everything but the bagel seasoning.
Enjoy with fruit on the side.
