Everything but the Bagel Savory Oatmeal

Ingredients

  • 1/2 cup Rolled Oats
  • 1 cup Unsweetened Almond Milk original or vanilla
  • 1/4 cup Sliced Mushrooms white or crimini
  • 1 Egg
  • 1/2 teaspoon Everything but the Bagel Seasoning
  • Olive oil Spray

Instructions

  • Combine oats and almond milk in a small pot. Cook on medium heat for 10-15 minutes or until almond beverage is almost evaporated.
  • To clean mushrooms just take a damp paper towel and wipe mushrooms to remove any dirt.
  • Roughly chop mushrooms.
  • Spray a pan with olive oil spray and put on low - medium heat.
  • Once the pan is hot add the mushrooms and saute until brown.
  • Once the mushrooms are brown push them to the side of the pan and crack 1 egg in the same pan. You may need to add more oil spray.
  • Cover with a lid and cook for 1-2 minutes depending on your yolk preference.
  • Add oatmeal, mushrooms, and egg to a bowl and top with Everything but the bagel seasoning.
  • Enjoy with fruit on the side.
