15 minute Pasta and Broccoli

This 15 minute Pasta and Broccoli is so good and extremely easy to whip up! This recipe is perfect for a weeknight dinner especially if you’re in a pinch and need a quick meal the whole family will eat. I promise they will ask for seconds and you will want to make this dish again and again. All you need is 15 minutes, one pot, and 5 ingredients.

Pasta and Weight Loss

Yes you can eat pasta and still lose weight! Remember any food is ok in moderation. Plus, this dish has a sneaky vegetable in there that even the pickiest eaters will love! The broccoli boils with the pasta because we love to multi task! The broccoli gets slightly over cooked so it can easily blend into the pasta making it creamy and incognito. This recipe is meatless but you can add protein like chicken or shrimp to make this a more balanced meal. But I think it’s perfect just like this.

Easy One Pot Meal

I love a one pot meal! Why clean more dishes then you have to right?! This Pasta and Broccoli recipe will be on your table and in your month in 15 minutes! Using only one pot helps us cut down on time. Weeknight dinners do not need to be complicated. Here’s how you make it!

Ingredients

  • Pasta (Bow tie or Elbow)
  • Broccoli Florets
  • Parmesan Cheese
  • Olive Oil
  • Garlic
  • Salt and Pepper

Directions

  1. Boil Pasta and Broccoli florets together in a large pot accordingly to the pasta package. Try not to over cook the pasta. Only the broccoli should be a little mushy.
  2. Before straining the pasta save one cup of pasta water with a ladle. You will add this back in the pasta with the other ingredients. The pasta water helps the pasta not dry out.
  3. Strain the pasta and broccoli together and then add the pot back to on the stovetop. Add 1 tablespoon of olive oil and the garlic. Cook until it’s golden. Keep the heat on low and return the pasta and broccoli to the pot.
  4. Add 1 more tablespoon of olive oil, the cheese, salt and pepper to taste and mix together well. Be sure to break the broccoli pieces up too.
  5. Add the pasta water to the pot and mix together. Taste and add any addition seasoning if necessary.
  6. Serve and enjoy with additional grated cheese. Just keep in mind how much cheese you add if you are on a weight loss journey.

This 15 minute Pasta and Broccoli dinner is so good and so easy the entire family will love! You will want to make this again and again. All you need is 5 ingredients and one pot!

Ingredients

  • 1 lb Pasta (bow tie or elbow)
  • 6 cups Broccoli Florets chopped
  • 2 tablespoons Olive Oil divided
  • 4 cloves Garlic mashed
  • 1/4 cup Parmesan Cheese shredded or grated
  • salt and pepper to taste

Instructions

  • Bring a large pot of water to a boil. Once it begins to boil add some salt to season. Boil the pasta and broccoli florets together for about 9-11 minutes or according to the directions on your pasta package.
  • Reserve one cup of pasta water using a ladle before straining the pasta.
  • Turn the heat off and strain the pasta and broccoli
  • Place the pot back on the stove and turn on low heat. Add 1 tablespoon of olive oil to the pot. Once the oil is hot add the garlic and cook for about 1 minute.
  • Place the Pasta and Broccoli back in the pot. Then add 1 tablespoon of olive oil, the parmesan cheese and salt and pepper. Mix together.
  • Add the pasta water to the pasta to make it creamier.
  • Add additional seasoning if necessary. Serve and top with more cheese.
