Chicken Salad Lettuce Wraps are the delicious, healthy, low-carb lunch idea you’ve been looking for! The term Chicken Salad can be confusing I know. I once ordered a Salad with Chicken for my boss instead of the Chicken Salad Sandwich she wanted and all I can say is that I’ll never be making that mistake again!

Chicken Salad is very customizable which is why people love it so much. It usually contains shredded chicken, mayonnaise, mustard, and a combination of vegetables. This goes great on lettuce or bread. Here is a simple Chicken Salad recipe to start with!

Easy Meal Prep Idea

Meal Prep this Chicken Salad on Sunday and have it ready for the rest of the week! Chicken Salad goes great on a sandwich too but if you want to cut some calories, butter lettuce cups make great vessels and a good way to sneak more veggies into your diet.

Chicken Salad is so easy to prepare. Especially if you have left over chicken. It takes only a few minutes to whip up. Another bread substitute that I really love is a red bell pepper. I have a Low Carb Tuna Salad Recipe using a bell pepper that you might like as well.

Ingredients for Chicken Salad Lettuce Wraps

The main ingredient you need for chicken salad is cooked chicken. You can buy a rotisserie chicken that’s cooked already or easily cook your own by boiling it or using the crockpot. Any chicken will work but I typically use chicken breast. Let the chicken cool, shred it, and then place it in a large bowl.

Now add as many ingredients as you’d like to your chicken. I like to add celery, cranberries, light mayonnaise, mustard, fresh dill, and salt and pepper. Mix that all together and you’re done!

Place your mixture in the refrigerator and let it sit for a few hours before serving. Add this to lettuce, bell peppers, bread, or crackers and you have yourself a healthy lunch or snack idea that’s also high in protein.

Chicken Salad Lettuce Wraps

Chicken Salad Lettuce Wraps are a light version of a classic dish. So tasty and easy to make.

Ingredients

  • 2 Cups Cooked Rotisserie Chicken
  • 1/2 Cup Light Mayonnaise
  • 1 teaspoon Yellow Mustard
  • 1 Celery Stalk
  • 1 teaspoon Fresh Dill
  • 2 teaspoons Dried Cranberries
  • salt and pepper to taste
  • Butter Lettuce leaves

Instructions

  • Shred precooked chicken.
  • Combine Chicken with light mayonnaise, mustard, celery, cranberries and dill and mix together.
  • Taste test and add salt and pepper if necessary.
  • Rinse butter lettuce before eating. Add chicken salad to a lettuce leaf and enjoy as a wrap or over bread.
