White Chicken Chili in the Crockpot is one of my favorite healthy recipes to make. It’s full of flavor that soothes your soul with every spoonful! This recipe is filled with hearty chicken breast, spices, white beans, salsa verde, and green chilis. Don’t worry it’s not spicy but you can always add jalapeños to give it a kick. The crockpot aka slow cooker does all the work for you making this the perfect meal for a busy day or lazy cooks!

I love the crockpot because you can just set it and forget it! Don’t get me wrong I love cooking but sometimes you just need something really effortless. What’s better than taking all your ingredients and just tossing them in one pot? Not much lol. This White Chicken Chili Salsa Verde is worth the mouthful!
Another reason why I love this recipe is because it’s low in calorie and filled with protein making it a perfect meal prep idea. There are a lot of ingredients but trust me it is worth it! Screen shot the ingredients and take it to the store with you!
Ingredients for White Chicken Chili in the Crockpot
Here is what you will need.
- 3-4 Chicken Breast
- 1 Onion
- 2-3 Cloves Garlic or a jar of minced
- 2 cans of (4oz) Mild Green Chiles
- 2 cans of White Kidney Beans
- 1 Jar of Salsa Verde (I use HERDEZ Brand)
- 1 32 oz Chicken Broth
- 1-2 Limes
- Seasonings (salt, cumin, oregano, black pepper, garlic powder, onion powder)
- Adobo Seasoning (optional)
- Toppings – Like shredded cheese, tortilla chips, sour cream, green onion
- 1 jalapeño for spice (optional)
How to use a Crockpot
Using the crockpot is literally the easiest thing in the world and your biggest life saver especially in the kitchen! Just dump all your ingredients in the crockpot and cover it. There are only two settings usually, high and low. If you will be gone all day you can cook on low for 8-9 hours or if you want dinner faster you can cook on High for 4 hours. This is pretty much the same for every crockpot recipe. You can not mess this up trust me! Please don’t worry about burning the house down either this is what the slow cooker was made for.
If you don’t have a crockpot yet you can find them anywhere. I would suggest one that’s at least 6 quarts. They have bigger slow cookers too if you have a large family and smaller one’s if it’s just you. Here is the Crockpot I use all the time!

White Chicken Chili in the Crockpot
Equipment
- Slow Cooker any Crockpot
Ingredients
- 1/3 Cup Onion diced
- 2 Cloves Garlic minced
- 3-4 Chicken Breast
- 1 Teaspoon Adobo seasoning or salt
- 2 Cans Mild Green Chiles 4.5 ounce cans
- 1 Cup Salsa Verde
- 2 Cans White Kidney Beans drained
- 32 ounce Chicken Broth
- 1 Teaspoon Cumin
- 1/2 Teaspoon Oregano
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Black Pepper
- 1/4 Teaspoon Onion Powder
- 1 lime juiced
- 1.5 Teaspoon Salt
- 1 jalapeño diced optional
Instructions
- Add your chopped onion, jalapeño, and garlic to the bottom of the crockpot.
- Rinse and pat dry your chicken breast. Add to the slow cooker and season with adobo, cumin, oregano, garlic powder, black pepper, and onion powder.
- Add the undrained cans of green chiles and the salsa verde to the crockpot.
- Then add the drained cans of white beans and the carton of chicken broth. Mix.
- Place the lid on the crockpot and cook on low for 8 hours or high for 4 hours.
- Before you serve remove the chicken and shred it with two forks and place back in to the slow cooker.
- Squeeze lime juice to the soup and add salt if necessary.
- Top with cheese, green onion, or tortilla chips and enjoy!
