The Best Thanksgiving Side Dish
I can’t even tell you how many years I’ve been making this exact recipe! It has been a tradition for over a decade in my family. This dish is great anytime of the year but I usually only make it for Thanksgiving. Thanksgiving is my favorite holiday and this recipe is apart of the reason why! If you are skeptical about trying this dish because you don’t think you will like it just trust me and give it a try! I’ve converted the pickiest of eaters.
This Sweet Potato Casserole is exactly that, sweet! Some people might even consider it a dessert. Not only is this dish delicious it’s also very easy to make. The hardest part of this recipe is cooking the sweet potatoes but there are a few different ways you can do it.
Cooking your Sweet Potatoes
- Peel and cube the sweet potatoes before boiling them in a large pot. This is the fastest way to get them tender. You will know they are done when you can easily poke a fork in them. Strain the potatoes and let them cool. Use a potato masher to mash them by hand or you can use a hand mixer.
- If you dont want to peel and chop them you can just boil them whole with the skin on. Just note this will take at least 30 minutes.
- You can also use a crockpot to cook them. Just rinse the sweet potatoes and place them in the crockpot. No need to poke holes in them or wrap them in foil. Cook them on High for 4 hours or Low 7-8 hours. Once they are cool you can slit them open and scoop out the sweet potato to mash.
- Or skip sweet potatoes all together and use canned yams instead. I have used canned yams before and the casserole taste was just as good! This is a great option if you dont have a lot of time or love a short cut.
